We’re Here, We’re Verified, And We Made Biscuits

Article Featured Image

You may have missed it – Lovin Malta is now officially an Instagram-verified account, taking our incessant millennial need for online validation to all new heights. Instagram’s launched an easy-to-use verification service and to celebrate our newfound recognition we made verification biscuits.

Because what other way would you celebrate an Instagram verification with; breaking out the champagne is passé anyway.

Basically Ingredients

To make verification (or any kind of plain) biscuits you will need

  • 1 whole egg
  • 140 g caster sugar
  • 2 teaspoons vanilla extract
  • 300 g plain flour
  • 250 g of melted butter (bear with us, we know it’s a whole lot of butter)
  • blue food colouring (or blue royal icing if you can manage it)
Basically Recipe

To start, preheat your oven at 180°C. In the meantime, grab a large bowl and mix your butter and sugar together until smooth. Then, add your eggs and your vanilla, combining well.

Once mixed, add your flour until you end up with a smooth chunk-free dough mixture and then place it in the fridge for around 10 minutes.

With your dough cooled, roll it our until you have a half-inch thick spread. Using a spiked or rounded cookie cutter, cut out as many biscuits as you can and then spread them out on a lined baking tray.

Leave the biscuits in for around 12-15 minutes; once cooked through, remove from the oven and place on a rack to let the biscuits cool.

Now comes the fun part: whether you’re celebrating your own Instagram verification or you simply want to send a passive-aggressive message to your fellow co-workers in a tasteful (geddit?) manner, it’s time to pull out your food colouring/icing.

Once you’re certain your biscuits have cooled all the way, begin setting out the design of your biscuit. Checkmark for verification, anything else you can dream up to suit your biscuit. Royal icing will definitely work better for a clean job, but food colouring will do the trick too.

And there you have it: your very own vanilla/shortbread-ish biscuits, the variety dependent entirely on whether you managed to work out your kitchen’s oven settings correctly. Not that we had that problem. At all. We’re pros.
